Summary:This literature review examines several studies that evaluated the factors that influences the adoption of vegetarianism, as well as the eating pattern and recommendations of the vegetarian food guide. A search on databases such as Medline (National Library of Medicine, USA) and Lilacs (Bireme, Brazil) allowed us to find scientific studies published in Portuguese and/or English that had the following keywords: vegetarian, vegetarian diet and vegetarianism. Vegetarianism has been disseminated for centuries and many respected physicians, scientists and philosophers followed this practice based on different reasons. The increasing number of individuals that adopt the vegetarian diet impute to Health professionals, particularly nutritionists, the responsibility of knowing the principles of vegetarianism, in expectation of their proper management and adjustment of the vegetarian feeding behavior to the nutritional requirements of the individual.
