description Based on an ethnographic investigation, interviews and biographical trajectories, this paper aims to explore the current (re)composition of baking activities, driven by peasant movements. Focusing on the use of sourdough, this text questions the transformations of technical arrangements as they are justified by the category of "living", a major element in the reconfiguration of baking practices. In addition to considerations on the practical realities experienced by bakers-peasants (corporal commitments, processes), these changes lead us to question their relationships with the different materialities that inhabit their bakeries (tools, animate entities).
