Biotechnological processing of secondary raw materials allows you to partially retain essential amino acids, as well as get a protein fortifier with a high degree of balance. By analyzing the literature, this paper demonstrates that microbial enzymes have positive effect not only on the formation of physico-chemical, microstructural, microbiological, structural-mechanical indicators, but also on the quality characteristics of the finished product. |
