description The aim of this study was to determine the economic effects and to define actions that occur in the choice of facilities, purchasing equipment, the drying process of different fruit species and commercialization of products. Analysis of economic parameters indicates that the production of dried fruit on family farms can be very profitable. To start the registration is not required high investments (about € 30,500), where the investment is repaid in about 1.6 years. Total earnings per year (about 135 days of effective work) is about € 17,300. Employing members of their own family can be achieved additional benefit of about 3,500 €. Specifically, in the production of dried apricots, fresh apricots dominate the cost (62.5%), followed by labor costs (21.2%), while indicative of a low share of energy costs (3.3%). The rate of profitability is 29.6%, and coefficient of economical is 1.42. In Serbia there are respectable natural and market potential for the development of this business, including significant opportunities for exports. The construction of small plants for drying fruit can be a significant contribution to increasing the income of agricultural households, reducing unemployment and overall development of villages.
