| Summary: | Dairy products are among the essential foodstuffs in the diets, especially for the diet of communities closely linked to agropastoral activities. However, they have aroused only limited interest in the historiography, unlike cereals, spices, meats, or fruits. However, the texts of the medieval Islamic West reveal a great variety of dairy products, illustrated by an important lexical diversity. The article conducts an in-depth analysis of medical and culinary treatises. It apprehends dairy products by determining the nature and properties of foodstuffs resulting from the processing of milk. The study of culinary uses and the food processes contributes to documenting the practices and discourse of medieval communities and, consequently, to better understand the agropastoral systems and supply networks. |
