Summary:This research was carried out to evaluate the quality of honeys throughout the storage time in two different environments. The experiment was carried out in a warehouse in the Teresina city, Brazil. The samples were collected from four batches of honey from the 2005 harvest prepared for exportation, and stored under two different conditions, the treatments consisted of: conventional storage and storage under refrigeration. The samples were analyzed for hydroxymethylfurfural (HMF) levels zero, 15; 30; 45; 60; 75 and 90 days of storage and the daily temperature were monitored in both storage environments. Laboratorial analyses were performed according to current Brazilian legislation. Refrigeration was effective in keeping mild temperatures in the acclimated storage, which was efficient in reducing the pace of HMF occurrence, when compared to the storage kept in environment temperature. The HMF content in the samples stored at environmental temperature were 44.78% higher than those kept under refrigeration.<br>Avaliou-se a variação da qualidade de méis ao longo do tempo de armazenamento em dois ambientes. O experimento foi realizado em um entreposto de mel da cidade de Teresina-PI, onde foram coletadas amostras de quatro lotes de méis para exportação da safra de 2005 e estocadas em duas condições de armazenamento. Os tratamentos consistiram em: armazém convencional e armazém refrigerado. As temperaturas dos dois ambientes foram registradas diariamente durante o experimento. Foram medidos os teores de Hidroximetilfurfural (HMF) nas amostras em zero, 15; 30; 45; 60; 75 e 90 dias de estocagem. As análises laboratoriais seguiram os métodos preconizados pela legislação brasileira vigente, descrita na Instrução Normativa Nº 11, de 20 de outubro de 2000, do Ministério da Agricultura Pecuária e Abastecimento. A refrigeração foi efetiva na manutenção de temperaturas amenas no depósito aclimatado, pois se mostrou eficiente na redução da velocidade de formação do HMF em relação ao depósito mantido à temperatura ambiente. O teor de HMF nas amostras armazenadas à temperatura ambiente foram 44,78% maiores que os mantidos sob refrigeração.
