Summary:During the study, the biological active substances included in its composition are extracted from the working root crop (Zingiber officinale) by aqueous and ethyl alcohol extraction. The amount of vitamins, macroand microelements and amino acids in the extracts is determined and the results obtained are analyzed. Biologically active substances contained in the plant were extracted with water at temperatures of 30, 60, 90°C, and its juice was extracted by the water-alcohol method. The amount of macro- and microelements, vitamins, amino acids in the extracts was determined.
