Summary:The article proposes a hydrodynamic model of forced convective drying of fruits and vegetables, in which the direction of the coolant flow to the product being dried, the degree of dispersion of the product layer, the hydrodynamics of drying fruits and vegetables in the form of spheroids, flat disks and flat plates, as well as supports with plastic, metal and wooden gratings, modeled based on the necessary equations and criterion equations.
