Structural Modification of Wheat Gluten by Dry Heat-Enhanced Enzymatic Hydrolysis
In this paper, a dry heat method is used to modify wheat gluten, and the effects of dry heat on the enzymatic hydrolysis and structure of wheat gluten are investigated.
