description Sweet potato powder contains prebiotic components and potentially used as wheat flour substitute. Several studies reported the association of prebiotic with immune system. The objectives of this study were to identify prebiotic component of sweet potato and wheat cookies and their effect on sIgA levels, bacterial populations, and chemical properties of children�s stool. Prebiotic component of sweet potato and wheat cookies were analyzed. The administration effect of 5 pieces (up to 30 g/day) sweet potato and wheat cookies on 5-12 years old healthy children was assesed in saliva and faecal sIgA levels, bacterial populations and chemical properties of the stool. Data were analyzed using SPSS statistical test of the Independent Ttest and Mann Whitney U-Test. The results indicated that the amount of FOS, raffinose and soluble fiber in sweet potato cookies were significantly higher compared to that of wheat cookies, but lower in the amount of resistant starch (p<0,05). While, stachyose, insoluble fiber, and total prebiotics in sweet potato cookies, similar to wheat cookies. The effect of sweet potato cookies consumption seems to similar with wheat cookies consumption on the levels of sIgA and population of lactic acid bacteria, E. coli, and total aerobic / anaerobic bacteria. Sweet potato and wheat cookies consumption have acidity effect in the stool (pH 6,24±0,74 and 6,42±0,48 respectively), but didn�t have significant differences among those cookies. The effect of sweet potato cookies administration were not significant difference with wheat cookies on water content and SCFA levels. Based on those results, it can concluded that sweet potato cookies had prebiotics contents as good as wheat cookies, and the consumption of sweet potato cookies have no significant effects compared to wheat cookies.
