Beside as a flavor compound, ester is also considered as natural preservative to prevent bacterial and fungal growth and prolong the shelf life of food. The reason for this is the antimicrobial property of flavor compound acts as defence systems in fruit to prevent from microbial attack. However, the antimicrobial property of ester will give negative effect on anaerobic digestion process if the fruit waste is utilized as feedstock on biogas production. The aims of this work were to study the effect of various esters and their concentration on biogas production. The experiments were conducted in batch process at thermophilic condition at temperature 55oC for 28 days of digestion. For effect of ester concentration, the experimental results showed that methane production increased by addition of esters at concentration up to 5 g/L for methyl butanoate, ethyl butanoate, ethyl hexanoate, and hexyl acetate. At concentration higher than 5 g/L, it showed inhibitory effect on biogas production. The minimum inhibitory concentration for methyl butanoate was in between 10 to 20 g/L and 5 g/L to 10 g/L for ethyl butanoate, ethyl hexanoate, and hexyl acetate. In order to confirm the ester as a carbon source, methyl butanoate, ethyl butanoate, ethyl hexanoate, and hexyl acetate was used at concentration 5 g/L without addition of medium. Those esters could act as a carbon source for the microorganisms, except hexyl acetate that showed strong inhibition on methanogenic bacteria. The investigation of the chain length of the alkyl and alkyl carboxylic was conducted using acetate ester (where the alkyl were methy-, ethyl-, butyl-, hexyl) and ethyl ester of acetate, butanoate and hexanoate at concentration 5 g/L. The result showed that acetate ester with longer chain of alkyl group than ethyl- gave inhibitory effect on methane production. Meanwhile addition of ethyl ester, increasing number of carbon on alkyl carboxylic group decreased the cumulative methane production. Further studies on this work are required to better understand of the mechanism that occurred with the addition of esters.
