description Red guava juice is product which made by Kelompok Tani Makmur I, Pageruyung District, Kendal Regency. But, it has a problem that shelf life of red guava juice didn�t match with the specific expired date and shelf life estimation didn�t yet. The attributes quality of product on existing quality standard, SNI 01- 3719-1995 have not tested yet by producer. The aims of this research were to idetermine the attributes of quality standard based on Indonesian National Standard of juice and the additional attributes, to identified the changing characteristics of product, to estimate the shelf life of product, and value-added of product. Quality test consist of calculate the physic properties (taste, color, texture, flavor), chemical test (ash, fat, carbohydrate, energy, protein, moisture, fiber, total sugar, vitamin C, formol number), metals contaminant test (Pb, Cu, Zn), and microbial contaminant test such as TPC (Total Plate Count). The shelf life estimation used Accelerated Shelf Life Testing (ASLT) method with the Arrhenius equation with parameters : viscosity, pH value, and color. Based on the research can be seen about the quality attributes standard of red guava juice based on Indonesian National Standard of juice and as a consideration to making Indonesian National Standard of guava juice. The shelf life of red guava juice with good quality is 37 days with a ratio of value-added 58,824% while the shelf life of red guava juice with mixed quality is 25 days with a ratio of value added 41,237%.
