Rosella flower has medicinal properties and characteristics more organic so it
does not use chemicals. This rosella flowers contain essential for the body
include: vitamin C, A, delphinidin 3-monoglukosida, sianidin 3-monoglukosida,
delphinidin and phenolic compounds. However, this has the disadvantage of
flowers quickly decay after being picked so it must be in the process within 2 days
and the poor drainage. Compounds are easily damaged it contains flavonoids
gossypetine, hibiscetine, and sabdaretine and previously identified as a major
pigment phniphylline. The risk of physical damage and chemical compounds on
the rosella flower so unthinkable to try to protect a lost and damaged compound
with the microencapsulation process.
The objectives of this research was to understand the effect of
microencapsulation process concerned to physical, chemical, characteristic of
final product. Production of Hibiscus sabdariffa L. extract used substance and
aquadest ratio 1:4. This extract was added with maltodextrin in variation 22,5 gr
(1:0,5), 45 gr (1:1), 67,5 gr (1:1,5), 90 gr (1:2) and dried with spray dryer at
temperature 100°C inlet and 70°C outlet.
Hibiscus sabdariffa L. extract with 22,5 gr maltodextrin added had the
highest yield. Adding 22,5 gr of maltodextrin had obvious effect for increasing
solid content in the extract. Microencapsulation by spray drying had obvious
effect in order to decreased water content, the particle size became smaller,
encapsulation efficiency ascorbic acid, encapsulation efficiency phenolic and the
increased of the solubility in final product. Hibiscus sabdariffa L. powder
encapsulation of variation 1:0,5 until 1:2 had 44,79%, 44,35% 37%, and 43,57%
ascorbic acid efficiency in 100 gram. Hibiscus sabdariffa L. powder encapsulation
of variation 1:0,5 until 1:2 had 41,61%, 39,17%, 30,58%, and 26,96% phenolic
eficiency in 100 gram. |
