This study was conducted to determine the changes in the physical properties of materials include brix, viscosity, and density making use of turmeric instant hot water jacketed crystallizer with various concentration. Variations in the concentrations used 67% 77% and 83%. The method used is the analysis of first order reaction kinetics equation and Newton's law of cooling anologi. The results showed that the mathematical model brix changes turmeric instant solution using analytical equations first order reaction kinetics with a constant value in the 77%, and 83% concentration are 0,3023 minute-1
