Summary:Hotel is a form of accommodation maintained commerciallu provided for any body to acquire service and lodging. The service is one of them at the food and beverage, food and beverage absolute need in operationalhotel. The sale food and drink is income second largest after earning from sales room. Hence the quality of food and beverage service necessary to reach customer satisfaction. This research aims to know the of food and beverage service at the Grand Dafam Merapi Merbabu hotel. To know the standart operational procedures for food and beverage service at the Grand Dafam Merapi Merbabu hotel. Within and to know to maintain and improve the quality of service in order to achieve guest satisfaction. The research was conducted over a three month period and method of data collection is done by means of observation, interview, documentation, and library studies. Then the data already abtained were analyzed using qualitative analysis to get conclusions in accordance with titles lifted. The development of service quality food and beverage service is very important in the world hospitality. The development was can be done by means of sevices, makes default service process during operation, taking into account all that needs to be done because the service quality will produce gratification for a guest. Maintain and improve the quality of service for the satisfaction of a guest.
