Mocaf can be used to substitute red rice as carbohydrate source in baby weaning food. White tempe koro is an alternative protein source which can be used as skim milk substitute since it�s rare to be used. The objectives of this reserach are (i) determine the most favourited ratio of mocaf dan red rice usage and ratio of white tempe koro and skim milk by panelist (ii) to know corganoleptic, chemical (proximate and HCN amount), and physical properties (viscosity, kamba density and water binding capacity) of instant baby porridge. In this research, organoleptic test is done to know the most favourite ratio of baby porridge with addition mocaf and red rice with variation percentage 0, 25, 50, 75 and 100%. After that, instant baby porridge is formulated again by the variation of white tempe koro (50, 60, 70, 80, 90, 100%) and skim milk (0, 10, 20, 30, 40, 50%) on chosen ratio mocaf and red rice, then those variations are tested to know organoleptic, chemical and physical properties. The results show that ratio mocaf and red rice 50:50 and for ratio white tempe koro and skim milk 90:10 is the most favourited by panelist. Addition of white tempe koro is know affected to increasing of viscosity and water binding capacity, but it lowers kamba density. Nutrition value of instant baby porridge are in range of standard (SNI). HCN testing shown that instant baby prorridge still have big amount of HCN.
