Summary: | Liquid smoke has a beneficial compounds but susceptible to damage due
to environmental factors. Encapsulation is needed for protection of liquid smoke.
This study aims to create a encapsul powder of liquid smoke with maltodextrin
and to determine the physical and chemical properties of liquid smoke powder.
Liquid smoke is made from coconut shell that burned in pirolisator with a
temperature of 400 � C for 3 hours and was redistilled 2 times. Encapsulation of
liquid smoke with maltodextrin coating used foam mat drying method. Variation
in the ratio of liquid smoke : maltodextrin used was 1 : 1, 2 : 3, 3 : 7, 1 : 4, 1 : 9.
Baking soda as a foaming agent in this study. Materials was formed foam before it
dried. Dried material dryer cabinet with a temperature of 50 � C for 24 hours. This
study aims to create a powder coating encapsulation of liquid smoke with
maltodextrin and to determine the physical and chemical properties of liquid
smoke powder.
The results showed encapsul powder with ratio of liquid smoke :
malrodekstrin 1 : 1 had the highest levels of acid and phenol content, and more
slowly dissolves in water. Water content encapsul powder of liquid smoke ranged
12.16% - 10.78%. diameter microencapsules of liquid smoke ranged from 22.98
to 33.52 μm. The majority of visible microencapsules of liquid smoke spherical.
