description Strawberries ( Fragaria Sp . ) is a group of products that are non - homogenous, so to get the appearance and uniformity of strawberries needed a good grading process based on existing quality standards. In Indonesia there is no SNI strawberries, strawberry determination of quality standards is still done by the perception produsen and likely be different across manufacturers. This causes the strawberries in the market tend to be uniform. Through Ministry of Research and Technology, the government published the module on the cultivation of strawberries and divide strawberries with quality grading basis weight per fruit, while facilitating international trade the UNECE developing and publishing standard FFV -35, with quality grading basis diameter per fruit. In addition, strawberries are known horticultural commodities that are perisable, so it requires a good post-harvest handling to maintain the quality in order to extend shelf life . This study aimed to identify and compare the quality characteristics of fresh strawberries in the traditional market and modern market based on standard FFV - 35 from the UNECE and according Kemenritek ( Ministry for Research and Technology ) with a statistical process control , determine the effect of each treatment storage strawberries against physical and chemical quality fresh strawberries, as well as value-added analysis of sales strawberry with Hayami methods. Based on the research result, can be seen by the FFV-35 standards of UNECE, 37.10 % samples of traditional markets including strawberries class II and class extra 24.80% , while 73.07 % samples of modern markets strawberries are extra classes . Meanwhile, according to standard Kemeneristek , 0.86 % strawberries sample traditional markets including the class A , class B 48.57 % , and 50.57 % of the class C , while samples of strawberries from modern markets 15.43 % class A, and 84.57 % class B. Strawberries during storage characteristics such as total dissolved solids , pH , texture , and levels of vitamin C , underwent significant changes . It means that the quality characteristics of strawberry in modern markets is better than traditional markets , with the ratio of value added strawberries in the modern markets for 25.73 % , while the traditional market only 9.05 %.
