Summary: | It is known that Rhizopus oryzae is able to produce ethanol. This fungus is
easily grown in moist conditions , especially pieces that were damaged . Nutrition
found in fruits and humid environmental conditions allow spoilage fruit can be used
as a source of Rhizopus oryzae isolates which is able to produce ethanol , so that the
spoilage fruit used in this study to get Rhizopus oryzae. Nutritional content of the
fruit can be used as a medium for ethanol fermentation . Fruit used as fermentation
media is apples that unfit for consumption . Ethanol fermentation is done with apple
extract with water 1:1 w / v , initial pH 5,5-6 , initial sugar content of 49.33 g / l and
inoculated with different spore concentrations of 104/ml and 105/ml . Results showed
that Rhizopus oryzae DA2 isolates obtained from spoilage avocado. Rhizopus oryzae
DA2 can produce ethanol in apple extract as much as 0.50 g ethanol / g substrate by
the number of initial spore concentration of 105/ml and 0.44 g ethanol / g substrate by
the number of initial spore concentration of 104/ml.
