of shoujin ryouri contained in Japanese home cooking or katei ryouri. The reason
why the writer uses this topic is because Japanese home cooking has similarity in
visual term with shoujin ryouri from the use of seasonal ingredients, the dishes colors,
and the serving in small dishes. From the similarity the author estimate that katei
ryouri adopt shoujin ryouri concept not only in visual term but also the Zen symbols
in shoujin ryouri on katei ryouri.
The author uses qualitative and descriptive method. The author uses library
research methods to obtain valid data and using thoughtful approach Sacred Symbols
Analysis in Region by Clifford Geertz.
From the analysis, the author concludes that there are three meanings of Zen
symbols in shoujin ryouri on katei ryouri. The first point is the use of seasonal
ingredients as the symbol of balance. The second point is that the cooking method
itself is presented as a symbol of discipline and altruism. The third point, in the way
of serving food expressed the sense of responsibility. On the other hand, the alteration
meaning of the Zen symbols is following three points. First, from the use of the
ingredients doesn�t contain the symbol of fusesshou (prohibition to not killing) on
katei ryouri. Second, the symbol on the five colors on the dish as a symbol of
human�s character are not applied on katei ryouri. The five colors on katei ryouri
only represent the aesthetics, not a symbol of holiness. Third, the symbol on the
dishes portion and food amount as a symbol of simplicity are not applied on katei
ryouri. |
