Summary:The objectives of the research were to found a stable gallic acid microemulsion, determine the effectiveness in preventing fish oil photooxidation, with BHA and TBHQ as hydrophobic antioxidants. The treatments were added 50, 100, 150, 200, 250 and 300 ppm gallic acid in fish oil microemulsion. The same level of BHA and TBHQ were added into fish oil. All of the samples were exposed to 4000 Lux light for eight hours. Peroxide values, anisidine values and total oxidation values of photooxidized samples were measured at two hours interval. The result showed that the stable microemulsion formed at HLB 6,5 with 69% of fish oil. The ratio of fish oil: water and surfactant is 69:31% with the ratio of water:surfactant is 20:80%. The surfactants consists of 72,5% of span 80, 15% of span 20 and 12,5% of tween 20. According to total oxidation value, the microemulsion formulation that contain gallic acid 200 ppm could be prevented the photooxidation in fish oil. The effectiveness of those antioxidants to prevent photooxidation of fish oil were TBHQ>BHA>gallic acid microemulsion.
