Summary:Sweet potato is a widely cultivated foodcrops in Indonesia and has the potential of endogenous amylase enzyme. The aim of this work was to study the effect of pH and temperature on amlylase activity and the effect of temperature on stability of amylase in yellow-fleshed sweet potato var. Korea. The activity of amylase in sweet potato extract was measured at different pH and temperature. The extract was maintain at different temperature and analyse its activity over period of time. The amylase in the yellow-fleshed sweet potato var. Korea has the highest activity at pH 5,5 and 55° C, but, amylase is not stable in 55°C because the activity decrease to 50% at 60 minutes of incubation. Amylase enzmye has the high activity and good stability at 50°C.
