Summary: | Salak seeds are one of the abundant agricultural wastes in Indonesia that
hadn�t utilized yet. Biochemical contents of salak seeds were unknown yet,
however they�re very potential for their suspected high amounts of polysaccharide
macromolecules. The aim of this study was to know the contents of salak seeds,
the hydrolysis condition and the characteristic of the sugar from salak seeds, and
the potency of salak seeds as sugar source.
