Summary: | This study was a reduction in total tannin and β - carotene during storage at low
temperatures ( 5 ° C ) and room temperature apple ( Malus domestica ) varieties
Rome Beauty is a fruit that is more and more consumed by the people of
Indonesia . This study aims to 1) Determine the total change in tannin and β -
carotene is an antioxidant compound during storage at room temperature and 5 °
C . 2 ) Knowing the changes in physical properties ( shrinkage weight , texture ,
color ) , physiological properties ( respiration rate ) and chemical properties (
water content , total acid , total sugar , sugar acid ratio ) during storage at room
temperature and 5 ° C . This study shows that there is a decrease in total tannin
and β - carotene is an antioxidant compound in Rome Beauty apples during
storage either at room temperature or at a temperature of 5 ° C . However , the
decline in total tannin and β - carotene was more pronounced at room temperature
than at 5 ° C temperature . decline in physical properties on Rome Beauty apples
are heavy shrinkage , color and texture during storage at room temperature and 5 °
C temperature
