Summary: | Honey is an animal product consumed by human beings because it has many benefits.
Productivity of honey in Indonesia is still very low compared to its potential. Beekeepers still face
obstacles with high levels of water contained in honey. The water content of honey in Indonesia
generally ranges between 20% - 25%, and there are up to 30%. This condition is not good for honey
because microbes grow quickly and the fermentation happened will damage the quality of the
honey. SNI (Indonesian National Standard) of year 2004 set the standard water content in honey to
a maximum limit of 22% |
