Summary: | Desiccated coconut is one of product made from coconut. The drying
process of grated coconut usually done by sunbathe method or mechanically using
cabinet dryer. Sunbathe method has many flaws, which is that the grated coconut
will be oxide due its contact with the atmosphere, it will be contaminated, and the
process is depend on the weather. Therefore, cabinet drying method was chosen
in this research.
Coconut cleaned and partially immersed inbisulfite solution for 20 minute
thereafter grated. The other part grated first and then sprayed with sodium
bisulfite, thereafter weighed as much as 300 gr for each variant and repetition.
Drying process done with variation of drying temperature at 40°C, 50°C, 60°C,
70°C and variation of sodium bisulfate immersion at 40 ppm, 50 ppm, sodium
sulfate bisulfate sprayed at 40 ppm, 50 ppm and control. The decrease of the water
content by the variation of sodium bisulfite and drying temperature is used to
determine drying rate constants (k), activation energy (Ea), and collision
frequency factor (A).
Drying with temperature variance is capable to decrease products water
content from 40%-60% to 3%-5%. Drying rate constants from drying temperature
and decrease in water content relation ranged from 0,01 to 0,289 m3.hour-1 .
Whiteness only affected by the variance of sodium bisulfate while the value of L
(lightness), a* redness and b* yellowness affected by drying temperature.
