description ABSTRAK Modified atmosphere storage coulds extend the shelf life of fresh fruits and vegetables. Modified Atmosphere was created naturally by respiration prosess, in which O2 concentrations was reduced and CO2 concentrations was elevated and gas exchange through the plastic films. Mathematical model was developed for gas exchange through the plastic films. Based on methematical model formed was made simulation to obtain optimal storage conditions. Sample used bananas, and the experiment designs were used to measure reduced O2 and elevated CO2, permeability of 0,03mm thick polyethylene plastic, and gas exchange through the plastic films. The experiments were conduct at 10°C, 20°C and 30°C temperature. The observed and predicted gas exchange through the plastic films was accordance. Based on simulation result, optimal condition could reached at 20°C temperature, 0.45 kg sample, 9 liter free volume in packaged, O2 = 4.53 cm3/hour and CO2 = 8.03 cm3/hour or 20°C temperature, 0.45 kg sample, 2.86 liter free volume in packaged, O2 = 1.80 cm3/hour, and CO2 = 14.35 cm3/hour.
