description | In Indonesia the pepper decortication to produced white pepper is commonly done traditionally by soaking harvested pepper for 8–14 days and removing the pericarp manually. Soaking method could cause in pepper smelly, contaminated by the microbe, and decreases of volatile oil content. Besides that, the quality of water will significantly affects the color of pepper. To overcome the problem a pepper decorticator without soaking procedure was developed. The decortication mechanism was designed by shearing the pepper on a gap between a static vertical cylinder and a vertical axis rotating tube powered by an electric motor. A grooved rubber sheet was attached on inner gap of the static cylinder and outer gap of rotating tube. The peppers enter into the gap be rotated and decorticated by compressive and shearing force during rotation. Experiments were done in three angular speed variations (524, 480 and 352 rpm), three width of gaps (3,8, 3,2 and 2,7 mm) and three length of rotating cylinders (10, 7,5 and 5 cm). The result shows that the width of gap and the length of rotating cylinder had significant effect on the pepper decortication performance. Meanwhile, the angular speed gave less significant effect. The best performance was found in 352 rpm of rotating speed, 3,2 mm width of gap and 5 cm length of cylinder which resulted 83,2% of decortication, 11,2% broken pepper and 10,3 kg/hour working capacity. |
