Summary:Indonesia as the one of the biggest country that produce cassava (Manihot esculenta) in the world. Cassava can be produced to the both of flour and starch. Based on earlier research, have been found the modified cassava starch (MOCAS) that has an ability on baking expansion trought fermentation process. The research objective was to find the fermentation period of cassava starch to get the mocas with highest ability on baking expansion. There were 2 treatment of fermentation process, with added acid and without acid. Variation of fermentation period were 2 days, 3 days, 6 days, 9 days, and 14 days. This research exposed the technical and financial feasibility analysis on mocas (modified cassava starch) production. The result of technical analysis showed that rendement of mocas is 25%. Three (3) days fermentation period with added acid had resulted mocas with highest ability on baking expansion, 1,15 cm3 /g. The production capacity of mocas is 250 kg/month, need 10 employees, and large of production place is 226,05 m2 . The result of financial analysis showed that project industry of mocas is feasible with NPV Rp 210.535.121; IRR 79%; PBP 1 year 6 months, and BEP is reached when sold 67952 kg mocas.
