Summary: | Food, dishes and tradition are important elements to study
about social and cultural changes. This thesis discusses a
conceptual and pragmatic change, about food, dishes and culture.
The main resources use in this study are photographs, Journey
stories, and mass media, which recorded about the realities and
the ornaments of life of society, especially to found a symbolical
meaning of material culture. The Main problem of this study is how
modernity give an influences to development of material culture in
the sense of Braudelian theory. A two question has emerged from
study about food culture, development of modernism, and social
culture identity changes in a food, dishes and tradition perspective.
First how modern society in urban Java at the late colonial era
made a new dining room and a food culture that showed and
created social status in society?. Second, why urban society in
Java at the late colonial era familiarized and integrated with
education of taste?.
From his study has found that food, dishes and culture
changed in urban society Java at the late colonial era take place on
public and household space. In a public space this alteration
occurred by perspective changing of society to got a easy, brief,
diverse, hygiene. and even luxury without messed out by a kitchen
problem. In a household space this changing occurred because
cooked process became more practical and efficient by an
improvement of gastronomy technology and consumed of
containing food. A conclusion of this studies is that education of
taste became a mainly factor of society taste and flavour changes.
Education of taste is a recognizing and formation process of dishes,
taste, and food culture in the society, arising out of contiguity and
association between cultural elements as well as development of
modern culture.
