Dried onion leaves was obtained from the onion bulbs separation or cutting with leaves, which the onion bulbs use to be planted as seed and the dried onion leaves thrown away unused. Therefore there is potency of dried onion leaves to be processed into a product, that is liquid smoke dried onion leaves. This research was determine whether the dried onion leaves can be processed into liquid smoke. If it can be processed into liquid smoke, then will be searched the optimal temperature and time on the yield of liquid with variable temperature and time. After that, the optimal result of liquid smoke from will be purifed by distillation process. The distilled liquid smoke there were analyzed by GCMS (Gas Chromatograpy Mass Spectometry) to indentfy the component. The result of this research obtained two kinds of liquid smoke, there are liquid smoke before purification (Grade 3) and liquid smoke after purification (Grade 2). The optimal results of liquid smoke to the yield that is obtained at temperature of 400°C and at time for 3.5 hours. The optimal yield of liquid smoke was obtained 22%. GCMS test results before purification of liquid smoke was detected 22 peaks (22 components). And GCMS test results after purification of liquid smoke was detected 22 peaks (22 components
