description Following Slovenian legislation the aim of this research was to determine the physico-chemical parameters in different types of honey. Sixtysix samples of six types of honey (acacia, floral, forest, fir, chestnut, and lime) were analysed for the content of water, ash, insoluble solids, HMF, acids, sugars and diastase activity. Statistical treatment of the results revealed that the assorted honeys differed in the content of the analysed parameters. The differences in the content of ash, total acids, diastase activity, fructose (F), glucose (G), and the F/G ratio among the types of honey were found to be statistically significant at PŁ0.001, in the content of HMF at PŁ0.01, and in the content of water at PŁ0,05, while the differences in the content of insoluble solids and sucrose were not significant. Comparing the results of the physico-chemical characteristics and the limits set by legislation we can conclude that practically all honeys correspond to Slovenian regulations (except seven samples of acacia with DN below 8).
