Summary:We conducted a study, using the Weende’s analysis scheme, of the proximatecomposition in six dried leguminous: peas, chickpeas, beans, lentils, peanutsand soybeans. We determined the content of major nutrients proximate, andcompared the results with those set out in the table of the institute of nutritionof the Ministry of health and social Welfare from 1965. the results were analy-zed using a t test that compares the means of the data obtained in our studywith the values of the Ecuadorian table of food composition from 1965. ourstudy shows that there is a difference between the results and concluded that itis necessary to continue with the analysis of other foods to update the table va-lues used as the basis of our research. furthermore a one-way anova analysiswas performed to compare the averages of the samples taken at different weeks.We considered that the source of random error depended on the method usedin the research, and the systematic error on the week when the sample wastaken (controlled or fixed factor). from the anova analysis we concluded thatthere are significant differences between weeks.
