Summary:Milk mid-infrared spectrometry has been used for many years to quantify major milk compounds. Recently, much research has been conducted to extend the use of this technology to predict new, relevant phenotypes to assess the animals' welfare and the nutritional quality of milk, as well as its technological quality and environmental footprint. The transition from the research stage to field implementation is not easy, due to intrinsic and extrinsic constraints, but some developments can be considered to address these issues.
