description | Coffee farming is one of the most important economic pillars of the Colombian countryside, due to the high quality of the pergamino coffee. To ensure their organoleptic properties are preserved, it is important that the moisture content within the dry coffee bean remains around 11%, otherwise its quality deteriorates; this is the reason why moisture control is essential during the marketing process and storage of this product. However, in most cases, determination of this parameter is subjective in shopping sites, which may cause damage in coffee grains and unfair transactions within the market chain. In this paper, application of dynamic speckle appears as a novel alternative to develop an objective methodology for determining, within 60 seconds, the moisture content of dry coffee beans in purchase places. Results of the proposed methodology in comparison with the gravimet method show the proposed methodology as an alternative for the development of a moisture measurement system. |
