Analysis and comparison of aroma compositions in Biluozhenzhu tea and Tieguanyin tea leaves(碧螺珍珠茶与铁观音的香气成分分析与比较)

碧螺珍珠是一种新创制的乌龙茶,它是利用名优绿茶碧螺春茶树上的驻芽的三叶,借鉴乌龙茶的加工方法制作而成的.本文对碧螺珍珠和铁观音这两种茶叶进行了香气分析和比较,结果表明这两种茶叶香气组成上总体相似,高沸点化合物含量均较高,主要有橙花叔醇、吲哚、2-苯乙醇和α-法呢烯等.但由于两者茶树品种和产地不同,在精油总量和香气组成上有一些差别,这也反映在两者的感官品质差别上....
