Starch modify is a method that can be used to reduce the problems. Modification can be done by chemically, physically or enzimatically. Liquid smoke can be used to replace the traditional curing process and has been used commercially in food products. Liquid smoke contain phenolic�s compounds, carbonyls and acids are easily lost during storage. Encapsulation is used to protect these compounds. The study aims to investigate the characteristics of modified starch made from taro starch by acetylation method, and to determine the effect of modified starch addition to characteristics in microcapsules of liquid smoke. Modified starch made by acetylation method and produced by variation of pH at pH 7, 8 and 9 to determine the optimal pH. The encapsulation�s method used in this study is spray drying. Liquid smoke encapsulated with modified starch as coating materials which is the variation ratio of liquid smoke and modified starch are 1:3 (w/w)
