resulting in degradation of phenol in quality and quantity. By converting of the
pure liquid smoke into the microcapsule, encapsulation system by a spray dryer is
a method to maintain the quality of the liquid.The aim of this study is to find a
liquid smoke encapsulation technology by encapsulation materials of
maltodextrin, chitosan and alginate by using spray dryer technology in order to
improve characteristic of physical and chemical properties of the liquid smoke.
The liquid smoke microcapsule was produced by encapsulating the liquid
smoke using spray dryer SD 04 (inlet 130oC, outlet 79oC, pump 7%, flow rate
5ml/min) with four types of encapsulation materials i.e. maltodextrin (control),
chitosan-maltodextrin, alginate- maltodextrin and chitosan-maltodextrin, by
different concentration ratios. The observed parameters in this study were phenol
release, shape and morphology of particle encapsulation, encapsulation efficiency,
drying yield, phenol marker, particle size and solubility. This study was carried
out by using a completely randomized design with three replications.
The results showed the best treatment of each type of encapsulation
materials. Chitosan 1% (w/v) and maltodextrin 9% (w/v) had the best result than
others. It showed 3,18% (w/w) of phenol in 20 minutes of release |
