Summary:Krengsengan oil as a basic ingredient of cooking oil has a turbid yellow color so that the bleaching process needs to be done. This research aims to identify the influence of the use of zeolite as a bleaching agent in the bleaching process of krengsengan oil. Determination of the zeolite activation temperature done by using various heating temperature of 100, 200, and 300°C. Active zeolite obtained at the optimum temperature then used in the bleaching process with the addition of various concentration of adsorbent (1, 2, 3, and 4%) and the variation of adsorbents such as zeolite and activated carbon-zeolite mixture (1:10). Respond that was observed in this study that changes color on krengsengan oil after bleaching process using activated zeolite and activated carbon-zeolite mixture (1:10). The result of this research shows that the optimum temperature for the zeolite activation is 200°C. Bleaching process causes the oil color changed to be clearer with yellow color intensity decreases. The addition of activated carbon to zeolite activated at a 1:10 ratio can improve oil color change rather than using only zeolite adsorbents. The addition of the adsorbent to a concentration of 4% produces better oil color. Bleaching process can also reduce levels of free fatty acids and peroxide value of krengsengan oil.
