Summary: | The aim of research was done to know the effect of chitosan solution as
edible coating to inhibits the deterioration of vacuum packed otak-otak bandeng
that stored at low temperature. Otak-otak bandeng was dipped into chitosan
solution (0%, 1% w/v and 2% w/v) during 1 minute. The experimental design was
Completely Randomized Design with 3 replicates. Organoleptic test (SNI 01-
2346-2006), Total Volatile Base, Thiobarbituric Acid, and Total Plate Count was
observed during experiment at 0, 7th, 14th, 21st, and 28th. The results showed that
the chitosan coating gives significant effect. Dipped otak-otak in the 2% chitosan
solution could prolong self life time of otak-otak bandeng.
