description The research was conducted to study the effect of reduCing pulp volume on production of reducing sugars during fermentation of cocoa beans in rotary cylinder through depulping step prior to fermentation. The experiment consisted of two treatments : reducing pulp of cocoa beans prior to fermentation and fermentation of cocoa beans in rotary cylinder. Pulp volume was observed before fermentation process. The result showed that pulp volume had significant effect on reducing sugars, total sugars, and sugar index. Depulping decreased reducing sugars and total sugars, but increased sugar index. The highest of the reducing sugars, total sugars, and sugar index obtained by pulp volume of 0.9 ml/bean which fermented for 4 days, 0.9 ml/bean at first day, and 0.4 ml/bean which fermented for 4 days respectively.
